Overnight Oats
A friend recently asked me for my recipe, so I thought I’d add it here! I come back to overnight oats whenever I need a nourishing breakfast that is versatile and easy to grab-and-go on rushed mornings. You can eat it cold or cook it very quickly, since the oats are pre-soaked. Mix and match your flavors and add-ins to make it your own!
Ingredients
½ c organic rolled oats
1/2-2/3 c milk of choice (I use unsweetened organic soy for added protein) - more if using more flax and chia seeds
10 g collagen powder or other protein powder of choice
2 TBS yogurt of choice
1-2 TBS hemp seed
1 TBS ground flax seed
1-2 tsp chia seeds
1-2 TBS of pumpkin seed, sunflower seed, or sesame seed
½ c fruit such as blueberries chopped apples
1 tsp vanilla extract
Dash of sea salt and cinnamon, to taste
Instructions
Combine all ingredients in a 16-ounce mason jar or other non-plastic container with a lid. Screw on the lid and shake well to mix.
Store the oats in the fridge overnight (I bet you didn’t guess this step :)
The next day, remove from the fridge. Taste it to check the flavor and consistency, and add ingredients to adjust to your liking if needed.
You can eat it cold or heat on the stove and eat warm. Add your desired toppings and enjoy!
