Stewed Apples
A simple and delicious way to enjoy the apple harvest.
Why cook your apples?
For one, I personally love the taste and texture of apples when they are cooked. But personal preferences aside, the cooking process improves both digestibility and nutrient content. Cooking breaks down the apple’s cell walls; this softens the pectin, a soluble fiber that feeds your healthy gut bacteria. The cooking process also increases the bioavailability of quercetin, an anti-inflammatory compound that stabilizes mast cells, decreases inflammation, and supports cardiovascular health.
This recipe can be altered to make a bigger or smaller batch. The only really important ingredient is the apples. Everything else is optional. Adding a bit of water can aid in the cooking process, but not absolutely necessary. The vanilla and spices are to taste, so adjust them according to your preference.
Ingredients
2 apples, chopped into bite-sized pieces
2 TBS water
1/2 tsp lemon juice
1/2-1 tsp vanilla extract
Generous dash of cinnamon
Optional: dash of cardamom and nutmeg
Instructions
Combine the water, lemon juice, vanilla extract, and spices in a small or medium saucepan. Add in the apples, and stir to mix. Turn to medium-high heat. After a few minutes, the mixture will begin to bubble. Give it a stir, then cover and turn down to medium-low. Simmer for another 5-10 minutes, until the apples are soft.
Enjoy these apples on top of oatmeal or ice cream, as a side dish with any meal, or straight from the pan. Store in the fridge and eat within a couple days.
My favorite snack is to combine these apples with a scoop of yogurt and granola - the best fall treat!
